2012 Billecart-Salmon Champagne Cuvée Elisabeth Salmon
The new release of this fantastic flagship rose from Billecart-Salmon and a follow-up to our offer of the cuvee Nicolas Francois. 2012 is another beautiful vintage for this cuvee that is among the top examples of all time. The Cuvee Elizabeth Salmon is an exquisite bottle featuring some of the best fruit from the house, with a blend of 45% Pinot Noir from Mareuil-sur-Aÿ, Aÿ and Ambonnay, 55% Chardonnay from Chouilly, Avize, Mesnil-sur-Oger, and Cramant. Still red wine is added for color, sourced from an old vine Pinot Noir vineyard called Valofroy in Mareuil-Sur-Aÿ. The Elizabeth Salmon went through a partial Malolactic fermentation with some oak and aged on the lees for 9.5 years before it was disgorged with a 3.8-gram Dosage, which is half the amount of the previous vintage. It's a deep and detailed wine showing a complexity of red, citrus, orchard fruit, followed by a stunning minerality. 2012 is a great vintage for Champagne, and this is a classic example, as Galloni notes in his review. Beautiful complexity this vintage, this is only going to get better with time, and we have a limited amount available today at this low pricing.

Medium to full-bodied, vinous and broad, it's dense and deep with a multidimensional core of fruit, racy acids and a textural structure, concluding with a long, delicate, mouthwatering finish. This is one of the finest rosé I've tasted at this address. Kudos!"

There is a feeling of classic austerity that runs through the 2012. | would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023."
