This is a great Sauvignon Blanc for clients who want clean, serious wine without Sancerre pricing but with equal quality. This cuvée is 100% organic Sauvignon Blanc from sandy loam soils in Touraine, where fast drainage and easy soil warming help produce a wine with good fruit expression while keeping a light, delicate feel; vine age averages around 20 years, which gives a nice balance of freshness and concentration. Winemaking is straightforward with a slow alcoholic fermentation in stainless steel at about 15°C, then lees aging, and at least six months of additional élevage in tank before bottling to build texture without losing cut. The result is a floral, mineral, and ripe orchard-fruit profile with bright acidity and proper balance, finishing on a mouthwatering saline note. A great food-and-wine pairing for creamier cheeses like goat cheese, as well as lighter seafood like shellfish and oysters, would be the perfect way to quaff down a bottle.
