NV Vilmart & Cie Champagne Premier Cru Cuvee Rubis
These are the last bottles we have of the new release of the Cuvee Rubis from Vilmart, which has been a long-time favorite among our clients and one of the best Rose cuvees in the grower Champagne universe. Vilmart has been producing Champagne for five generations in the Montagne de Reims and is led by Laurent Champs, who farms with respect for the land and applies incredible attention to detail in the cellar. It is one of the few modern Champagne houses that uses only oak barrels and foudres for fermentation and aging, which is the perceptible signature of the house. The absence of Malolactic fermentation adds layers of complexity and creates outstanding energy in the Champagnes, allowing the wines to age on lees longer to build richness, while also pairing well with the oak aging and fermentation, keeping energy without becoming round. This is another outstanding example of Rubis from Vilmart and not to miss at this low price!

In the glass, it pours a bright pink/orange color and is fruity and inviting, with notes of ripe raspberries, cherry blossoms, sweet citrus from grapefruit and orange, and crushed roses. Medium-bodied, it’s refreshing and delicately fruity, with a lively mousse and a crisp freshness on the finish. It will drink well over the next 5-7 years, but it's delightful as a fresh-styled wine to drink now. "
